Ingredients (4 fritters = 2 servings):
- 1 cup grated zucchini (squeezed dry) make sure you get all the moisture out. (cheesecloth works the best)
- ½ cup full-fat cottage cheese
- 1 egg
- ¼ cup almond or oat flour
- 1 clove garlic, minced
- Salt, pepper, herbs of choice
Instructions:
- Combine all ingredients.
- Form patties and pan fry in 1 tsp avocado oil 3–4 min per side.
