Cottage Cheese & Zucchini Fritters

These Cottage Cheese & Zucchini Fritters are light, crispy, and packed with protein. Perfect as a wholesome side or snack, they combine tender zucchini with creamy cottage cheese for a clean, satisfying dish you can enjoy any time of day.
Ingredients (4 fritters = 2 servings):

  • 1 cup grated zucchini (squeezed dry) make sure you get all the moisture out. (cheesecloth works the best)
  • ½ cup full-fat cottage cheese
  • 1 egg
  • ¼ cup almond or oat flour
  • 1 clove garlic, minced
  • Salt, pepper, herbs of choice

Instructions:

  1. Combine all ingredients.
  2. Form patties and pan fry in 1 tsp avocado oil 3–4 min per side.
