Salad Ingredients:
- 1 small head of Green Cabbage
- 3-4 baby Cucumbers
- 1/4 cup of Chives
- 1 bundle of Green Onions or Scallions
- ¾ cup Edamame cooked and cooled ( ice water bath after cooking works best)
- ¼ cup celery
Dressing Ingredients:
- 1 cup of Basil Leaves
- 1 cup of Spinach Leaves
- 2 cloves of Garlic
- 2 tbsp Fresh Italian Parsley (Packed)
- 1 small Shallot Juice of 2 Lemons
- 1/4 cup of Olive Oil
- ¼ cup sesame oil
- 1/4 cup of Cashews
- 1 tsp Dijon mustard
- â…“ cup Mayo
- 1/3 cup of Nutritional Yeast*
- 1 teaspoon of Salt
- 2 tablespoons of Rice Vinegar
- 1 tsp Sesame Seeds
- 1 tsp Ground Ginger
- ¼ tsp Red pepper flakes
- Any extra Chives (optional)
- Salt & Pepper to taste
Preparation:
1. Finely chop/dice the cabbage, cucumber, green onion and celery.
2. Add to a large mixing bowl.
3. To a blender, add the liquids first, then add the rest of the dressing ingredients. Season generously with salt and blend until smooth.
4. Pour the dressing into the large salad and toss to evenly coat all of the ingredients.
5. Serve & enjoy immediately either on it’s own or with tortilla chips to dip or some fried wonton wrappers!
